LB's Cinco Pesos Yoga Class

Hi Fit and Fabulous friends!! I want to let you all know that I will be having a $5 Yoga class at Advanced Training Concepts this Thursday on June 10th, 2010 at 7:30 pm. It is my first real class that I am instructing so you all can be my practice while I work out the kinks! Please try to make it - the address is 1607 Montford dr Suite F behind Jet's Pizza. Bring a mat, towel, water, a block or strap if you like and an Amigo or two! Expect a nice, light, workout, a deep stretch, and a fun playlist!! Hope to see you there!

FFR Recipe of the week

Porcini-Parmesan Frittata
Prep Time: 12 minutes
Cook Time: 9 minutes
4 servings (serving size: 1 wedge)

Ingredients
2 cups dried porcini mushrooms (2 oz)
6 large egg whites
4 large eggs
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/2 cup pre-shredded Parmesan cheese
1 tbsp olive oil
minced fresh chives (optional)

Prep:

1. Preheat broiler

2. Place mushrooms in a large ovenproof skillet. Cover mushrooms with cold water. let stand 2 minutes. Drain. Return mushrooms to skillet. Cover with cold water; bring to a boil. Drain. Pat mushrooms dry with a paper towel.

3. Combine egg whites and next 3 ingredients in a large bowl, stirring well with a whisk. Stir in mushrooms and cheese.

4. Heat oil in pan over medium-high heat. Add egg mixture; cook 3 minutes or until slightly set. Broil 3 minutes or until eggs are completely set and browned. Cut frittata into 4 wedges. Garnish with chives.
